Pupusas, Overpopulation and the Football War

 

There are few foods as richly invested with nationalistic pride as the pupusa, an inexpensive stuffed pastry considered the national food of El Salvador. And every afternoon at around 4pm, from the streets of El Salvador and throughout the strongholds of the Salvadoran diaspora – neighborhoods filled with refugees of the nation’s brutal civil war who have made their homes from Los Angeles, California, to San José, Costa Rica – pupusas are patted out.
